Salvador Spaghetti

As a teen a friends grandmother came for a visit from Italy. Her life life had been hard as shown by her weathered face and hunched shoulders. However, her eyes sparkled like the night sky and quickly drew me in. I loved sitting on the floor listening to her life long stories. Before she left she handed me her spaghetti recipe which I had begged her for. She never shared her recipes she said. Not even to her children. I was a chosen one she told me. Now I choose you. Enjoy!

Equipment

Ingredients

  • 3 onions diced
  • 2 tbsp cooking oil
  • 2 tbsp garlic diced
  • 2 lbs ground beef
  • 1 lbs sage sausage
  • 1 large can tomato juice
  • 2 can tomato paste
  • 1 large can stewed tomatoes
  • 1/4 tsp anise seed
  • 1 tsp allspice
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tsp parsley
  • 1 tsp basil
  • 1 tsp Italian seasoning
  • 1 tsp red pepper flakes
  • 1 tsp. celery seed
  • 1/2 tsp sugar
  • 1 cup mushrooms cut in half
  • Parmesan cheese as desired
  • 1 lb spaghetti noodles

Instructions

  • Brown ground beef, sausage, onions and garlic till done.
  • Pour into a crock pot
  • Add remaining ingredients except for the Parmesan cheese and mushrooms
  • Cook on low for 6-8 hours. The longer the better.
  • About 20 minutes before ready to serve, cook spaghetti noodles according to package directions (add 2 tbsp salt to water when bringing it to a boil).
  • Add mushrooms for the last ten minutes of cooking (when you add the pasta to the boiling water).
  • Strain pasta (do not rinse).
  • Mix noodles and spaghetti sauce together.
  • Sprinkle with Parmesan cheese before serving. Serve hot.

Notes

This dish can be cooked in a shorter amount of time if needed. However, the longer it cooks the better it gets.
Tip: Great layered with cheese and baked in the oven till hot the next day.
Tip: Pasta noodles can be cooked, stored in a Ziplock bag covered with water and placed in the refrigerator for up to 10 days.
